We did a walking tour in the small city of Tamegroute. One of our stops was at the rather unassuming adobe building shown in the photo below.
The stacks of wood outside should have been a clue as to the nature of the structure. This is a “bakery” where the local women gather for gossip, tea, and baking their daily bread.
The interior of the building was extremely dark, the only source of light being the door and a small wood burning oven at the far corner. There were around a dozen women in there, socializing. Most wore burkas so out of respect for their privacy I didn’t take any photos of them.
An elderly lady sat near the oven and was clearly the matron in charge of this operation. She’d take the flatbread and put it on a long-handled, rounded baking sheet, insert it into the oven, and make sure it cooked evenly.
In a matter of moments, it was baked. And it was delicious!
